Cornish Pasty Ingredients For The Shortcrust Pastry 500g x Bread Flour or Plain/All-Purpose Flour 120g x Lard (diced) 120g x Unsalted Butter (diced) 1tsp/6g x Salt 175ml x Cold Water For the Filling 400g x Beef Skirt (sliced or diced) 300g x Potatoes (peeled & diced) 150g x Swede/Rutabaga (peeled & diced) 150g x Onion (peeled & diced) Salt & Black Pepper 1 x Beaten Egg for Egg Wash Method Make the Pastry Place the flour and salt into a mixing bowl. Add the lard and butter. Rub together with fingertips until the mixture resembles fine breadcrumbs. (Alternatively, pulse in a food processor.) Add the cold water and mix until a dough forms. Tip the dough onto a floured surface and knead lightly for 3 to 4 minutes until smooth and elastic. Wrap in cling film and chill in the fridge for at least 1 hour (longer is better). Prepare the Filling Peel and dice the potatoes, swede, and onion into small cubes (about 1 cm). Slice the beef into thin strips. Combine the vegetables and meat in a large bowl. (Do not season yet, seasoning later prevents excess liquid release.) Roll and Cut the Pastry Once chilled, roll the pastry out on a floured surface to 2 to 3 mm thick. Use a 20 cm plate as a template to cut out 6 rounds. Re-roll pastry as needed. Fill and Shape Season the filling generously with salt (around 1 tsp) and black pepper (1/2 tsp). Mix well. Divide the filling evenly between the pastry rounds, piling it into the centre. Add a couple of small cubes of butter on top of each filling mound (optional). Brush pastry edges with beaten egg (or water). Fold over into a half-moon shape. Press edges firmly together, then crimp to seal: use your finger and thumb to fold the edge over in a neat pattern. 5. Bake Place pasties on a baking tray lined with baking paper. Brush tops with beaten egg. Make 2 small holes in the top of each pasty to allow steam to escape. Bake in a preheated oven at 165°C fan (180°C conventional) for 50–55 minutes, until golden brown and crisp. Serve Allow to cool slightly before eating. Best enjoyed warm with the filling juicy and tender inside. #cornishpasty

Chocolate Eclairs Makes 12 Eclairs Ingredients For the Choux Pastry: 120ml x Water 120ml x Milk 115g x Unsalted Butter 12g x Sugar 1/4 tsp x Salt 125g x All-Purpose/Plain flour 4 large eggs For the Pastry Cream: 960ml x Whole Milk 200g x Sugar 8 x Egg Yolks 60g x Cornflour/Cornstarch 2 tsp x Vanilla Extract For the Chocolate Glaze: 120ml x Double/Heavy Cream 115g x Dark Chocolate (chopped) 25g x Butter (optional, for shine) Method Make the Choux Pastry - Preheat your oven to 375°F (170°C Fan or 190°C without a fan). Line a baking tray with parchment paper. In a medium saucepan, combine: 120ml water 120ml whole milk 115g unsalted butter 1 tbsp sugar ¼ tsp salt Bring to a boil over medium heat, stirring until the butter melts. Once boiling, add 125g all-purpose flour all at once, and stir vigorously with a wooden spoon or spatula until a dough forms and pulls away from the sides (about 1–2 minutes). Remove from heat. Transfer the dough to a mixing bowl or stand mixer. Let it cool for 5–10 minutes so the eggs don't scramble. Add 4 large eggs, one at a time, beating well after each addition. The dough should be smooth, glossy, and hold a soft peak when lifted. Bake in the preheated oven for 25 to 30 minutes until golden. Make the Pastry Cream In a medium saucepan, heat: 960ml whole milk until steaming, but not boiling. In a separate bowl, whisk together: 200g sugar 8 egg yolks 60g cornstarch 2tsp Vanilla Slowly pour a little of the hot milk into the egg mixture while whisking constantly to temper the eggs. Gradually whisk in the rest of the milk, then return the mixture to the saucepan. Cook over medium heat, stirring constantly, until the cream thickens and bubbles (about 2–4 minutes). Remove from heat and stir in: Transfer to a bowl, cover with parchment paper (touching the surface), and chill for at least 1 hour. Make the Chocolate Glaze Place 115g dark chocolate, chopped into a heatproof bowl. Heat 120ml of cream in a small saucepan until just simmering, then pour it over the chocolate. Let sit for 2 minutes, then stir until smooth. Stir in the butter for added shine (optional). Assemble the Eclairs Using a small piping tip, poke 3 holes in the bottom of each cooled éclair. Fill a piping bag with the chilled pastry cream and pipe the cream into the eclairs until they feel heavy and full. Dip the tops of the eclairs into the chocolate glaze, letting excess drip off. Set on a rack or tray to let the glaze set (you can chill them for 10 minutes in the fridge to speed this up). Serve immediately or store in the refrigerator for up to 2 days. This Soups So Good, It’s Basically a Meal Beef, Barley & Bacon Soup Ingredients (serves 6–8) 150g x streaky bacon or Irish rashers, chopped into small pieces 450g x stewing beef (shin, brisket, or chuck), diced 10g x butter or beef dripping 200g x pearl barley, rinsed 200g x onions (about 2 medium), chopped 200g x leeks (about 2 medium), cleaned and sliced 150g x celery (about 2 sticks, optional), chopped 300g x carrots (about 3 medium), diced 300g x potato peeled & diced 2L x beef stock (or a mix of beef + chicken stock for balance) 2 x bay leaves 5g x fresh thyme (or 1 tsp dried) 10g x fresh parsley, chopped (for garnish) Salt and freshly ground black pepper, to taste Method Cook the bacon: In a heavy pot, fry the chopped bacon until it renders its fat and turns golden. Remove from the pan Brown the beef: In the same pot (with bacon fat), brown the beef pieces. Remove from the pan. Soften veg: Add onions, leeks, (and celery if using) and carrot. Cook 5 minutes. Add barley & stock: Stir in the rinsed barley, Add the bacon and beef back in, then pour over stock. Add bay leaves and thyme. Simmer gently for 1 hour. Add root veg: Stir in potatoes. Continue simmering 30–40 minutes until beef, barley, and veg are tender. Finish: Remove bay leaves, season with pepper (taste before salting — bacon adds salt). Stir in fresh parsley. Garnish with the reserved crispy bacon if desired.

The crispiest, creamiest chicken pie… wrapped in filo pastry. This Filo Chicken, Leek & Bacon Pie is comfort food at its absolute best — golden, buttery layers on top, rich and creamy filling inside. Rustic, indulgent, and guaranteed to impress. What you’ll need * 800g chicken thighs (boneless, skinless, diced) * 120g smoky bacon (cut into lardons) * 2 leeks (sliced) * 20ml olive oil * 20g Dijon mustard * 30g plain flour * 300ml chicken stock * 300ml double cream * 100g cheddar (grated) * 8 sheets filo pastry + melted butter * Salt & pepper to taste How to make it 1. Sear chicken in olive oil until golden. Add bacon, cook until crisp. 2. Toss in leeks, soften 3–4 mins. Stir through mustard + flour. 3. Pour in stock, then cream. Let it bubble, melt in cheddar. Season (go easy on salt, bacon + cheese already pack flavour). 4. Brush a pie dish with butter. Layer filo sheets, brushing between each. 5. Spoon in filling, fold pastry over rustic-style, brush generously with more butter. 6. Bake at 200°C for 40 mins → golden, crisp, bubbling perfection. 🌿 Serve with your fave sides and dig in.
