Satay Chicken Skewers Ingredients 2 x Chicken Breasts 175g x Smooth Peanut Butter 100ml x Warm Water 30ml x Light Soy Sauce 30ml x Lemon or Lime Juice 1 tsp x Turmeric Fresh Coriander to Garnish Method Soak wooden skewers in cold water for 30 minutes before cooking. Butterfly the chicken breast and cut into thin strips. Place into a mixing bowl. Whisk together the peanut butter, warm water, soy sauce and lemon or lime juice in a saucepan until smooth. Cook over low heat for 3 to 4 minutes. Keep 1/4 of the sauce back for dipping and use the rest to coat the chicken. Skewer the chicken strips and arrange on a grilling tray. Grill for 6 to 8 minutes turning halfway through until golden and cooked through. Serve with fresh coriander.

Lamb Burgers Makes 4 Ingredients For the Lamb Burgers 475g x Lamb Mince 1 x Small Red Onion (grated) 2 x Garlic Cloves (minced) 15g x Mint Leaves (chopped) 15g x Parsley (chopped) 4g x Ground Cumin 4g x ground Coriander Salt & Black Pepper For the Mint Yoghurt Sauce 20g x Mint Leaves 15g x Coriander Pinch of Salt 15g x Caster Sugar 10ml x White Wine Vinegar 50ml x Boiling Water 280g x Greek Yoghurt Note: This is quite a large batch of sauce, so feel free to half the recipe. To Assemble 4 x Burger Buns Iceberg Lettuce (shredded) Cucumber (sliced) Tomato (sliced) Red Onion (sliced) Method 1. Make the Lamb Patties In a large mixing bowl, combine the lamb mince, grated onion, garlic, mint, parsley, cumin, coriander, salt, and pepper. Mix thoroughly until everything is evenly incorporated.Divide the mixture into 4 equal portions and shape into balls. Chill in the fridge until ready to cook. 2. Prepare the Mint Yoghurt Sauce In a jug or food processor, combine the mint, coriander, salt, sugar, vinegar, and boiling water. Blend until smooth.Stir the herb mixture through the Greek yoghurt until well combined. Cover and refrigerate until serving time. 3. Cook the Burgers Heat a frying pan over high heat. Add the lamb balls and flatten them into patties using a spatula.Cook for 2–3 minutes per side, or until nicely browned and cooked through. 4. Assemble the Burgers Toast the burger buns. Spread a little mint yoghurt sauce on the bottom half of each bun.Layer with sliced cucumber, then a lamb burger, a spoonful more sauce, tomato slices, shredded lettuce, and red onion. Top with the other half of the bun. Tom’s Tip: Toss the shredded lettuce in a spoonful of the mint yoghurt sauce before adding it to your burger—it makes a quick, delicious slaw-like layer that takes it to the next level.

Mashed Potato Fries Ingredients 500g x Potatoes 60g x Cheddar Cheese (Grated) 2 x Cloves of Garlic (Crushed) 4g x Salt Good Grind of Black Pepper 60g x Cornflour/Cornstarch 4g x Paprika 2g x Dried Oregano Oil for Deep frying Method Peel and cut the potato into small chunks. Place into a pan of salted cold water and bring to a boil. Cook for 20 minutes or until fully cooked through Drain and mash the potatoes and then add in the grated cheese, crushed garlic, salt, black pepper, cornflour, paprika and dried oregano. Mix until fully combined. Place it into a piping bag and pipe it into thin fry-sized strips onto a wooden board or parchment paper. Heat your oil to 180°C and fry in batches until golden and crisp - usually 2 minutes. #mashedpotatofries #fries #recipe

Creamy White Wine & Leek Mussels Serves 2 Ingredients 400g x Mussels 15g x Unsalted Butter 10ml x Olive oil 1 x Leek 2 x Cloves of Garlic 10g x Parsley 120ml x White Wine 100ml x Cream Salt & Black Pepper (to taste) Method Begin by checking and cleaning the mussels (See video for reference). Next, Cut the leek in half and give it a good wash. Then, slice it up as thin as you can. Peel and roughly chop the garlic and roughly chop the parsley. Place a pan over medium heat and add the butter and oil. Once the butter melts place in the sliced leeks, followed by a pinch of salt. Sweat them down for 3 to 5 minutes until soft. Add in the garlic and cook for one more minute. Pour in the wine and bring it to a simmer before adding in the chicken stock. Once simmering again, add in the cream and bring that up to a simmer. Grind in some black pepper before placing in the mussels. Cover with a lid and steam for 3 to 4 minutes. Once all the mussels are open, they are ready to eat. Stir through half of the parsley. Serve in a bowl with crusty bread and enjoy!
