Tomato Pasta in 13 Minutes — It’s Almost Too Easy
(Serves 2 – Generous Portions)
Ingredients
450g x Cherry Tomatoes, Halved
2 x Garlic Cloves, Thinly Sliced
25g x Fresh Basil Leaves
20ml x Olive Oil
170g x Dried Pasta (or approx. 85g per person)
Salt and Freshly Cracked Black Pepper, to taste
Method
Prep the ingredients:
Halve the cherry tomatoes, thinly slice the garlic, and pick the basil leaves from their stems.
Get the pasta water going:
Bring a large pot of salted water to a boil.
Sauté the tomatoes:
In a large frying pan over medium-high heat, add the olive oil and cherry tomatoes. Season with a pinch of salt and cook for about 1 minute, just until they begin to soften and blister.
Cook the pasta:
Add the pasta to the boiling water and cook according to the package instructions.
Build the sauce:
Add the sliced garlic to the tomatoes and cook for the rest of the pasta cooking time, stirring occasionally, until fragrant and softened.
Add the basil:
When the pasta has about 1 minute left, stir the basil into the tomato mixture and let it wilt.
Combine:
Transfer the cooked pasta directly from the pot into the pan using tongs or a slotted spoon. Toss everything together until the pasta is well coated in the sauce. Adjust seasoning with salt and pepper as needed.
Serve:
Plate immediately, topping with a few fresh basil leaves and a drizzle of extra virgin olive oil for an aromatic finish.
