CHOCOLATE & BISCOFF BANANA BREAD: A Simple Recipe
Makes 1 Loaf
Ingredients
225g x Self-Raising Flour
175g x Light Brown Sugar
100ml x Vegetable Oil
2 x Ripe Bananas
1 tsp x Baking Powder
50ml x Milk
2 x Eggs
1/2 tsp x Ground Cinnamon
70g x Chocolate Chips
14 x Lotus Biscoff Biscuits
1 Jar x Smooth Biscoff Spread
Method
1. Place the self-raising flour, light brown sugar, vegetable oil, bananas, baking powder, milk, eggs and cinnamon into a blender or food processor and blend until smooth.
2. Transfer the cake mixture into a bowl and add two-thirds of the chocolate chips and ten of the lotus biscoff biscuits broken into smaller pieces. Fold them through the mix.
3. Place the cake mixture into a loaf tin lined with parchment paper and bake in a preheated oven at 160°C Fan for 45 to 50 minutes. Once baked, remove from the tin and place onto a cooling rack.
4. Once it’s cooled, spread as much biscoff spread as you like over the top of the banana bread using a palette knife. Sprinkle over the remaining chocolate chips and break over the last four biscuits.
