FAST 30 Minute BUTTER CHICKEN | Quick and Easy Recipe
Ingredients for the Marinade
600g x Chicken Thighs (skinless and boneless)
4 x Cloves of Garlic (finely grated)
15g x Fresh Ginger (finely grated)
7g x Garam Masala
3g x Kashmiri Chilli Powder (or 3 parts paprika to 1 part cayenne pepper)
1/2 tsp x Fine Sea Salt
Ingredients for the Sauce
50g x Unsalted Butter
1 x Small Brown Onion (roughly chopped)
4 x Cloves of Garlic (finely grated)
15g x Fresh Ginger (finely grated)
7g x Kashmiri Chilli Powder
5g x Ground Cumin
3g x Garam Masala
300g x Chopped Tomatoes
60ml x Water
150ml x Cream ( plus extra to garnish)
Salt to taste
Squeeze of Lemon or Lime Juice
Fresh Coriander to Garnish
Method
Cut your chicken into slices and place them into a mixing bowl. Next, add the garlic, ginger, garam masala, Kashmiri chilli powder and salt. Mix everything until the chicken is fully coated.
Place 10g of the butter into a pan over medium heat. Sear the chicken for 4 to 5 minutes and remove it from the pan. Add the onions and cook until soft. Next, add in the garlic, and ginger and cook for 1 more minute before placing in the spices and cooking for a further 30 seconds.
Pour in the chopped tomatoes and water, and simmer for 5 minutes until everything is soft. Transfer the sauce to a blender and blend until smooth. Then pass it through a sieve to make it extra smooth.
Pour the sauce back into a pan and bring to a simmer, stir through the remaining butter and add in the cream. Place the chicken back into the sauce and gently simmer for 10 minutes.
Season to taste with salt and squeeze in the juice of one lemon or lime. Serve immediately with rice or naan bread and garnish with a drizzle of cream and some fresh coriander.
