Honey Glazed Ham - Christmas Recipe
Ingredients
1x Gammon Joint (mines 2kg)
1x Medium Brown Onion
1 x Carrot
1 x Parsnip
1 x Bulb of Garlic
2 x Bay Leaf
2 x Star Anise
1 tsp x Cloves
1 tsp x Black peppercorns
Sprig of Sage
Water
For The Glaze
150g x Runny Honey
50g x Wholegrain Mustard
Juice of 1 Orange or 3 Satsumas
Method
1. Cut the onion into quarters (skin on), carrot into 4 or 5 chunks, the same again with the parsnip and cut the bulb of garlic in half.
2. Place the gammon joint into a large saucepan and add in the chopped vegetables, bay leaf, star anise, cloves, black peppercorns and sage. Cover the pan with cold water until the ham is covered by 2 to 3 inches.
3. Place over high heat and bring it to a boil. Once boiling, reduce to a simmer and cook for 20 minutes for every 500g/1lb. My joint was 2kg so I cooked it for 80 minutes.
4. To Make the glaze mix the runny honey, wholegrain mustard and orange juice until fully combined. Leave to one side until ready to use.
5. Once the ham is cooked, preheat the oven to 180°C Fan. Take the ham from the pan (you can discard the water vegetables and spices) and remove the skin, leaving a decent layer of fat. Score the fat with a knife in a crisscross fashion and this is the stage where you can stud it with cloves if you like.
6. Place it into the preheated oven for 15 minutes. After 15 minutes spoon over 1/3 of the glaze and place it back into the oven. Repeat this 2 more times until you've used up all of the glaze. Take it from the oven one more time, baste it with the sticky glaze that is on the baking tray and place it back into the oven for a final 5 minutes.
7. Remove from the oven and cool for at least 10 minutes before carving. Enjoy!
