How to Make Banoffee Pie | Easy No-Bake Dessert Recipe


Ingredients


For the base:

300g x Digestive Biscuits (or graham crackers)

120g x Unsalted Butter (melted)


For the filling:

2 x 400g Cans of Dulce de Leche (or caramel made from condensed milk)

3 to 4 x Ripe Bananas


For the topping:

400ml x Double Cream (heavy cream)

45g x Icing Sugar (optional, to sweeten)

1tsp x Vanilla Extract (optional)

Grated Dark Chocolate or Cocoa Powder (to decorate)


Method


Make the biscuit base

Crush the biscuits into fine crumbs (using a food processor or by sealing in a bag and bashing with a rolling pin).

Stir in the melted butter until fully coated.

Press the mixture into the base and slightly up the sides of a 24 cm loose-bottomed tart tin.

Chill in the fridge for at least 1 hour to set.


Prepare the filling

Spread the caramel evenly over the chilled biscuit base.

Slice the bananas and arrange them in a single, generous layer over the caramel.


Whip the cream

Whip the double cream until it holds soft peaks.

Sweeten with icing sugar and vanilla extract if desired.


Assemble and decorate

Spoon or pipe the whipped cream over the bananas.

Finish with a dusting of cocoa powder or a grating of dark chocolate.


Serve

Keep chilled until ready to serve. Slice with a sharp knife and enjoy!
