Loaded Sweet Potatoes with Chorizo, Cheddar & Sour Cream
These loaded sweet potatoes are a simple way to turn a humble sweet potato into a proper meal. Roasted until tender, then loaded with melted mature Cheddar, crispy chorizo, sour cream, spring onions and smoked paprika. It’s comforting, filling and packed with flavour - and incredibly easy to make.

Loaded Sweet Potato

Ingredients
4 medium sweet potatoes
100g chorizo, diced
75g mature Cheddar, grated
100g sour cream
2 spring onions, finely sliced
1 tsp smoked paprika
Olive oil
Fine sea salt
Black pepper
Method
Heat the oven to 200°C Fan / 220°C conventional.
Rub the sweet potatoes with a little olive oil and season with salt.
Place directly on a baking tray and roast for 45-60 minutes, depending on size, until completely tender and the skin is nicely roasted.
While the potatoes cook, add the diced chorizo to a dry frying pan over medium heat.
Cook for 5-7 minutes, stirring occasionally, until deeply browned and crispy.
Remove from the pan and set aside.
Load them up
Once the potatoes are cooked, cut in half and scoop out the sweet potato , keeping the skins intact.
Fluff the flesh with a fork and season with a little salt, pepper and smoked paprika.
Add the grated Cheddar while the potato is still piping hot so it melts.
Top with the sour cream, crispy chorizo and spring onion.
Finish with little more black pepper grated cheese if you like.
