Meatloaf Recipe | Proper Mashed Potato (Restaurant Style)


Ingredients


Meatloaf


750g x Beef Mince (Ground Beef) 

50g x Breadcrumb

1 x Medium Brown Onion

3 x Cloves of Garlic

2 x Eggs

6ml x Worcestershire Sauce 

2g x Dried Parsley

1g x Dried Thyme

Salt & Black Pepper 


For The Glaze


125g x Tomato Ketchup

30ml x Cider Vinegar

6ml x Worcestershire Sauce

15g x Sugar


The Mash


Baking Potatoes

Salt (to line baking tray)

Diced Butter

Salt & Pepper to taste


Method


1. For the meatloaf, place the beef mince into a mixing bowl and add the breadcrumbs. Next, top and tail, cut in half, and peel the onion. Then peel the garlic. 


2. Using the large side of a box grater, grate the onion into the bowl and finely grate in the garlic cloves using a microplane (you could finely chop it or use a garlic crusher here too). 


3. Crack in the eggs followed by the Worcestershire sauce, dried parsley, dried thyme and a pinch of salt and black pepper. Mix and scrunch everything together until it feels sticky to the touch. 


4. Shape the meat mixture into a loaf shape and place it into a loaf tin lined with parchment paper. 


5. To make the glaze, place all of the ingredients into a bowl and mix until fully combined. Place half of the glaze on top of the meatloaf and place into a preheated oven at 170°C fan for 45 minutes. 


6. For the restaurant-style mashed potatoes, Place a generous layer of salt onto a baking tray and lay the potatoes on top of the salt. Prick the skins of the potatoes and cook them in the oven with the meatloaf to bake. 


7. Back to the meatloaf. After 45 minutes remove the meatloaf from the tin and onto a baking tray, cover with the remaining glaze and place back into the oven for a further 30 minutes. After the full cooking time, take from the oven and leave to rest for 10 to 15 minutes before slicing.


8. By this time the potatoes will be fully cooked and you can remove them from the oven. Place a sieve over a mixing bowl in preparation and begin to cut the potatoes in half. Scoop out the potato into the sieve and press it through using a plastic scraper or the back of a spoon. Stir as much or as little butter (the more the merrier) through the mashed potato until melted and season to taste with salt and pepper. You could also add a splash of cream or milk here if you like. 


9. Serve your meatloaf with proper mash, greens of your choice and a good splash of gravy.
