Roast Potatoes Recipe: Secret Technique Revealed!
Roast Potatoes with Rosemary & Thyme Sea Salt
Ingredients
1kg x Potatoes (Red Skin Variety)
1tsp x Salt
1tsp x Bicarbonate of Soda
Cold Water
100g x Goose Fat or Duck Fat
Rosemary & Thyme Sea Salt
10g x Sea Salt
7g x Fresh Rosemary (leaves picked)
5g x Fresh Thyme (leaves picked)
Method
1. Peel the potatoes and cut them into equal-sized pieces. I recommend cutting them in half or quarters but try to make them all a similar size.
2. Place the potatoes in a saucepan, add the salt and bicarbonate, and top it up with cold water until the potatoes are covered. Place over high heat and bring to a boil. Once boiling, turn it down to low and simmer for 20 to 25 minutes until the potatoes are completely cooked through.
3. Gently remove them from the water and place them onto a cooling rack.
4. Place the goose/duck fat onto a baking tray and into a preheated oven at 180°C Fan for 10 minutes. Once hot, place the potatoes into the fat and roll them around. Place back into the oven for a total cooking time of 45 minutes, turning them around every 15 minutes - two turns in total.
5. To make the Rosemary and Thyme Sea Salt. Add the ingredients into a mortar and pestle and grind them together until the herbs break down and you have a bright green fine sea salt mixture.
6. Remove the potatoes from the oven and season them with the rosemary and thyme salt.
