Avocados, one of the most popular "trendy" foods going and I can see why. They contain good fats, they are naturally sodium, sugar and cholesterol-free and they contain vitamins A, D, K and E.

Method

  1. Step 1

Start by gathering and weighing out all of your ingredients. Place a large deep pan of salted water on the hob and bring it to the boil ready for your pasta.

  2. Step 2

While your pasta water is coming up to the boil it's time to start making the avocado (2) sauce. The easiest way to do this is by using a food processor. Prepare your avocados by cutting them in half and removing the flesh, place into your food processor.

  3. Step 3

Crush one clove of garlic (1 garlic) and throw it in with the avocado (2). Next, add in the zest and juice of one lime (1).

  4. Step 4

Pick the basil (1 basil) leaves from the stalks and add them to the food processor(keeping some back to decorate your pasta dish with later).

  5. Step 5

Add a generous pinch of sea salt and black pepper. Blend until the mix is smooth and creamy. Don't forget to taste it, it may need some more salt and pepper to suit your taste. Your sauce is complete.

  6. Step 6

The pasta water will be ready with a rolling boil by now so its time to cook your pasta. If using dried tagliatelle (160 g) follow the timings on the packet although it should take around 8 - 10 minutes. If using fresh pasta it will take 2 - 3 minutes to cook.

  7. Step 7

Once the pasta is cooked drain it and mix your avocado (2) sauce through the hot tagliatelle (160 g). Serve immediately by placing the cherry tomatoes (10 tomatoes) on top with some basil (1 basil) leave and the grated parmesan (10 g).

Questions people ask

How long does avocado tagliatelle with basil and lime take?

About 25 min from start to finish, of which 10 min is prep and 13 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
