Method
- Step 1
Begin by pouring the balsamic vinegar (200 ml) into a small saucepan. Place over high heat and reduce it by two-thirds or until you have a balsamic syrup. Remove from the heat until you're ready to use it.
- Step 2
Half the peaches (3 peaches) and remove the stones. Place a griddle or frying pan over high heat. Brush the peaches with a little oil before placing them face-side down in the hot pan until they caramelise and char. Flip them over and put them into a preheated oven at 180°C Fan for 10 minutes.
- Step 3
Toast your pine nuts (20 g) in another dry, hot frying pan until golden or do this on a baking tray in the oven.
- Step 4
Dress the rocket leaves (20 g) with a drizzle of extra virgin olive oil and a pinch of salt and pepper.
- Step 5
To serve, place the dressed rocket leaves (20 g) onto a plate or platter and place the burrata into the centre. Next, place the charred peaches (3 peaches) around the outside and weave the sliced prosciutto (6 slices) ham between them. Finally, finish with a drizzle of balsamic glaze and sprinkle of toasted pine nuts (20 g).
