Method

Prepare the vegetables

  1. Step 1

    Peel and thinly slice the onion (1 onion).

  2. Step 2

    Peel and grate the carrots on the large side of a box grater over a bowl collect any juice for extra flavour.

  3. Step 3

    (Alternatively, slice the carrots thinly, this may need slightly longer cooking.).

Sweat the vegetables

  1. Step 1

    Heat 30ml of oil in a large saucepan over medium heat.

  2. Step 2

    Add the sliced onion (1 onion) and grated carrot.

  3. Step 3

    Season with a pinch of salt and cook for 5-8 minutes, stirring occasionally, until softened.

Add spices and stock

  1. Step 1

    Stir in 1 teaspoon of ground coriander (1 tsp) and cook for 1 minute to release its aroma.

  2. Step 2

    Pour in 1 litre of stock (1.2 l) (vegetable (30 ml), chicken, or water).

  3. Step 3

    Bring to a simmer and cook for 10 minutes until the carrots are tender.

Blend the soup

  1. Step 1

    Remove from heat. Blend until smooth using a stick blender or food processor.

  2. Step 2

    For an extra silky texture, pass the soup through a sieve using the back of a ladle to press it through.

Finish and season

  1. Step 1

    Taste and adjust seasoning with salt and black pepper.

  2. Step 2

    Stir through 30-40 g of finely chopped fresh coriander (40 g).

Serve

  1. Step 1

    Ladle into bowls.

  2. Step 2

    Optional: finish with a drizzle of cream and sprinkle of fresh coriander (40 g).
