A dotted underline means the amount has been rounded to something you can measure.
Method
- Step 1
Cut the onion (1 onion) into quarters (skin on), carrot (1) into 4 or 5 chunks, the same again with the parsnip (1) and cut the bulb of garlic (1 garlic) in half.
- Step 2
Place the gammon joint (1 joint) into a large saucepan and add in the chopped vegetables, bay leaf (2 leaf), star anise (2 anise), cloves (1 tsp), black peppercorns (1 tsp) and sage. Cover the pan with cold water until the ham is covered by 2 to 3 inches.
- Step 3
Place over high heat and bring it to a boil. Once boiling, reduce to a simmer and cook for 20 minutes for every 500g/1lb. My joint (1 joint) was 2kg so I cooked it for 80 minutes.
- Step 4
To Make the glaze mix the runny honey (150 g), wholegrain mustard (50 g) and orange juice until fully combined. Leave to one side until ready to use.
- Step 5
Once the ham is cooked, preheat the oven to 180°C Fan. Take the ham from the pan (you can discard the water vegetables and spices) and remove the skin, leaving a decent layer of fat. Score the fat with a knife in a crisscross fashion and this is the stage where you can stud it with cloves (1 tsp) if you like.
- Step 6
Place it into the preheated oven for 15 minutes. After 15 minutes spoon over 1/3 of the glaze and place it back into the oven. Repeat this 2 more times until you've used up all of the glaze. Take it from the oven one more time, baste it with the sticky glaze that is on the baking tray and place it back into the oven for a final 5 minutes.
- Step 7
Remove from the oven and cool for at least 10 minutes before carving. Enjoy.

Questions people ask
How long does honey glazed christmas ham take?
About 2 hours 40 min from start to finish: 15 min of prep, 2 hours 15 min of cooking, and 10 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.
How much does this make?
The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.
Can I see the ingredients in ounces and pints?
Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
