Method
- Step 1
Peel and cut the potato (500 g) into small chunks. Place into a pan of salted cold water and bring to a boil. Cook for 20 minutes or until fully cooked through.
- Step 2
Drain and mash the potatoes (500 g) and then add in the grated cheese (60 g), crushed garlic (2 garlic), salt (4 g), black pepper, cornflour (60 g), paprika (4 g) and dried oregano (2 g). Mix until fully combined.
- Step 3
Place it into a piping bag and pipe it into thin fry-sized strips onto a wooden board or parchment paper.
- Step 4
Heat your oil to 180°C and fry in batches until golden and crisp - usually 2 minutes.
