Method

  1. Step 1

For the meatloaf, place the beef mince (750 g) into a mixing bowl and add the breadcrumbs (50 g). Next, top and tail, cut in half, and peel the onion (1 onion). Then peel the garlic (3 garlic).

  2. Step 2

Using the large side of a box grater, grate the onion (1 onion) into the bowl and finely grate in the garlic (3 garlic) cloves using a microplane (you could finely chop it or use a garlic crusher here too).

  3. Step 3

Crack in the eggs (2) followed by the Worcestershire sauce (6 ml), dried parsley (2 g), dried thyme (1 g) and a pinch of salt and black pepper. Mix and scrunch everything together until it feels sticky to the touch.

  4. Step 4

Shape the meat mixture into a loaf shape and place it into a loaf tin lined with parchment paper.

  5. Step 5

To make the glaze, place all of the ingredients into a bowl and mix until fully combined. Place half of the glaze on top of the meatloaf and place into a preheated oven at 170°C fan for 45 minutes.

  6. Step 6

For the restaurant-style mashed potatoes, Place a generous layer of salt onto a baking tray and lay the potatoes on top of the salt. Prick the skins of the potatoes and cook them in the oven with the meatloaf to bake.

  7. Step 7

Back to the meatloaf. After 45 minutes remove the meatloaf from the tin and onto a baking tray, cover with the remaining glaze and place back into the oven for a further 30 minutes. After the full cooking time, take from the oven and leave to rest for 10 to 15 minutes before slicing.

  8. Step 8

By this time the potatoes will be fully cooked and you can remove them from the oven. Place a sieve over a mixing bowl in preparation and begin to cut the potatoes in half. Scoop out the potato into the sieve and press it through using a plastic scraper or the back of a spoon. Stir as much or as little butter (the more the merrier) through the mashed potato until melted and season to taste with salt and pepper. You could also add a splash of cream or milk here if you like.

  9. Step 9

Serve your meatloaf with proper mash, greens of your choice and a good splash of gravy.

Questions people ask

How long does meatloaf with proper mashed potato take?

About 2 hours 5 min from start to finish: 20 min of prep, 1 hour 30 min of cooking, and 15 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
