Method

  1. Step 1

    Begin by preheating the oven to 180°C - 356°F.

  2. Step 2

    Next, Chop the rhubarb (6) into 2cm sized chunks and place in a saucepan over medium heat.

  3. Step 3

    Add into the same pan, raspberries (200 g), rosé wine (150 ml), lemon (1) juice, 180g of caster sugar (180 g) and cook for 10 minutes.

  4. Step 4

    To make the crumble topping, place flour (200 g), caster sugar (180 g) and butter (110 g) into a bowl and rub together with your hands until it resembles breadcrumbs.

  5. Step 5

    Next, pour the filling into an oven proof dish and finish with the crumble topping.

  6. Step 6

    Place into the oven and bake for around 40 minutes or until golden and crisp on top.

  7. Step 7

    Serve with extra raspberries (200 g), pouring cream, ice cream or custard.
