Method

  1. Step 1

    Begin by washing all ingredients and allow them to drain. The least moisture on the leaves will result in the dressing coating the leaves more efficiently.

  2. Step 2

    Next, prepare your ingredients by removing any stalks and leaves you don't want to eat.

  3. Step 3

    Chop the lettuce (120 g) to your desired size, half or quarter the radishes (10) and pick the leaves from the mint (10 g), coriander (15 g) and parsley (15 g). place all ingredients into a large mixing bowl.

  4. Step 4

    To make the dressing, place mint leaves (10 g), coriander (15 g), parsley (15 g), dill (10 g) and nasturtium leaves (10 g) into a food processor followed by salt, white wine vinegar (30 ml), olive oil (80 ml) and black pepper. Blend until it's smooth or you can leave it a little chunkier if you prefer.

  5. Step 5

    Now, pour half of the dressing over the prepared salad with a little extra pinch of salt and pepper. Gently mix using your fingertips until everything is evenly coated.

    Next, finely chop the chives (10 g).

  7. Step 7

    To serve, layer up the dressed salad and place any radishes (10) on top that may have dropped to the bottom of the mixing bowl. Scatter with nasturtium leaves (10 g), sprigs of dill (10 g), viola flowers (5 g), thyme flower (3 g), chopped chives (10 g) and finish with a generous drizzle of herb vinaigrette.

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.
