Method

Prepare the apples

  1. Step 1

    Peel 6-8 apples (6).

  2. Step 2

    Cut each apple (6) in half and remove the cores.

  3. Step 3

    Thinly slice the apples (6) about 1-2 mm thick.

    Use a mandolin for best results and be very careful, it is very sharp.

  5. Step 5

    If slicing with a knife, ensure the slices are as thin and even as possible.

    Place all sliced apples (6) into a large mixing bowl.

Add orange zest and juice

    Add the zest of one orange (1) to the apples (6).

  2. Step 2

    Squeeze the juice from the orange (1) into the bowl.

    The zest adds most of the flavour.

    The juice marinates the apples (6) and prevents discolouration.

    Use your hands to mix thoroughly until every slice is completely coated.

Make the batter

    In a separate bowl, whisk together the eggs (2) and caster sugar (70 g) until pale and the sugar is fully dissolved.

    Add the melted butter (30 g), milk (120 ml), vanilla, cinnamon (½ tsp) and nutmeg (¼ tsp) and whisk until smooth.

    Add the plain flour (75 g) and whisk until just combined.

Combine apples and batter

Prepare the tin

Assemble the cake

Bake

Cool and glaze
