Makes 15


Ingredients


125g x Desiccated Coconut

200g x Sweetened Condensed Milk

15 x Whole Almonds (blanched and peeled if possible)


Method


Prepare the Almonds

If your almonds are already blanched and peeled, you can skip this step.

Place the almonds into a pan of boiling water.

Boil for 1 minute.

Remove from the heat and immediately transfer the almonds to a bowl of cold or iced water.

Allow them to cool completely.

Once cool, slip the skins off - the peels should come off easily.


Make the Coconut Mixture

In a mixing bowl, combine:

125 g desiccated coconut

200 g sweetened condensed milk

Mix until fully combined and the mixture forms a sticky dough.


Shape the Treats

Take a small spoonful of coconut mixture and flatten it slightly in your hand.

Place one peeled almond in the centre.

Roll the mixture around the almond to form a ball.

Repeat with the remaining mixture.

(Optional: Roll the finished balls in extra desiccated coconut for a classic “Raffaello” look.)


Chill & Serve

Place the balls in the refrigerator for at least 30 minutes to firm up.

Serve chilled.
