I Combined French Onion Soup & Grilled Cheese… it’s INSANE
You’ve never had grilled cheese like THIS before.
In today’s recipe, I fuse the deep, savoury richness of French onion soup with the ultimate comfort food: a perfectly golden, crispy grilled cheese sandwich. We’re talking caramelised onions, layers of melty cheese, and buttery, toasted sourdough. I hope you enjoy it!

French Onion Grilled Cheese
Makes 2 Sandwiches
Ingredients:
2 x Large Brown Onions (thinly sliced)
30g x Unsalted Butter (plus more for sandwich)
1 tsp x Fresh Thyme Leaves (or ½ tsp dried)
60ml x Dry White Wine
125ml x Beef Broth
70g x Gruyère Cheese (grated)
35g x Cheddar Cheese (grated)
4 slices x Sourdough Bread
Salt to taste
Method
Caramelise onions:
Melt butter in a pan over medium heat. Add onions and salt. Cook 30–40 min until deep golden brown. Add wine and thyme, cook until evaporated. Stir in beef broth and reduce until jammy. Set aside.
Assemble sandwich:
Butter one side of each slice of bread. On unbuttered side, layer Gruyère, caramelised onions, and cheddar cheese. Top with second slice.
Grill:
Heat frying pan over medium-low. Cook sandwich until both sides are golden and cheese is melted, about 3–4 min per side.
Serve:
Slice and enjoy. Optional: serve with small side of beef broth or French onion soup as dip.
