This is the kind of dinner you'll make once... and then wonder why you ever ordered takeaway. Crispy chicken coated in a sticky honey garlic sauce, served with rice, quick-pickled cucumber, spring onions and sesame seeds. It's packed with flavour, comes together in around 20 minutes, and makes a brilliant easy dinner for busy nights.
Sticky Honey Garlic Chicken – Easy 20-Minute Dinner
Sticky Honey Garlic Chicken Bowls
Serves 4
Chicken
600g chicken breast or thighs, cut into bite-sized pieces
2 tbsp cornflour
1 tsp smoked paprika
½ tsp garlic powder
Salt and black pepper
1 tbsp oil for frying
Sticky Honey Garlic Sauce
4 garlic cloves, finely grated
80g runny honey
60ml light soy sauce
1 tbsp rice vinegar
1 tbsp sweet chilli sauce
1 tsp sesame oil
1 tsp grated fresh ginger
1 tsp cornflour mixed with 2 tbsp water
Quick Pickled Cucumber
½ cucumber, thinly sliced
2 tbsp rice vinegar
1 tsp sugar
Pinch of salt
To Serve
300g rice
3 spring onions, finely sliced
Sesame seeds
Fresh coriander (optional)
Lime wedges
Cook the rice according to the packet instructions.
Meanwhile, combine the cucumber with the rice vinegar, sugar and salt and leave to pickle while you cook everything else.
Mix the chicken with the cornflour, smoked paprika, garlic powder, a generous pinch of salt and plenty of black pepper until evenly coated.
Heat the oil in a large frying pan over a medium-high heat.
Cook the chicken for 6-8 minutes, turning occasionally, until golden, crispy and cooked through.
Reduce the heat slightly.
Add the garlic and ginger and cook for 30 seconds.
Pour in the 80g honey, 60ml soy sauce, 1tbsp rice vinegar, 1tbsp sweet chilli sauce and 1tsp sesame oil. Simmer for 1 minute.
Stir in the cornflour slurry and cook for another minute until the sauce becomes thick, glossy and beautifully sticky.
Divide the rice between bowls. Top with the sticky chicken and spoon over any extra sauce.
Finish with the pickled cucumber, spring onions, sesame seeds and coriander.
Serve with a wedge of fresh lime.

This gives me happy vibes. I love honey and sticky chicken but where I live would have to travel a fair distance to get it. Thanks to you I can make it at home. This is dinner either tonight or possibly tomorrow might not look as good as yours Tom. I will also be minus the sweet chilli sauce but might add extra honey cause I love it. I never thought it would be quite that easy to make. By the way I batch grate garlic and ginger, place it in a snap lock bag, run a knife into squares to score not cut the bag. Leave it flat in freezer, once frozen break them apart in the little blocks…
