The BEST Creamy Garlic Mushrooms (Ready in 15 Minutes!)
Serves 2
Ingredients
250g x Mushrooms (chestnut or any variety you like)
2 x Cloves Garlic (or more, to taste), finely chopped
Small handful x Flat Leaf Parsley, chopped
20–30g x Butter
300ml x Cream (single or double)
Splash of Water (or white wine, optional)
Salt & black pepper, to taste
Crusty bread or sourdough, for serving
Method
Prepare the mushrooms
Clean the mushrooms by brushing away dirt (or rinsing quickly if you prefer).
Trim the stem ends and cut into quarters, or break into rustic pieces.
Prep the aromatics
Finely chop the garlic.
Roughly chop the parsley leaves. Set aside.
Cook the mushrooms
Heat a pan over medium-high heat and melt the butter.
Add the mushrooms and toss to coat. Cook for 3–5 minutes until softened and lightly caramelised.
Add garlic
Stir in the garlic and cook for 2–3 minutes until fragrant.
Deglaze the pan
Add a splash of water (or white wine, if serving as a dinner starter). Scrape up any caramelised bits for extra flavour.
Make it creamy
Season with salt and pepper.
Pour in the cream and bring to a gentle boil. Reduce until the sauce thickens and coats the mushrooms.
Prepare the bread
While the sauce reduces, toast thick slices of sourdough or crusty bread under a hot grill until golden on both sides.
Finish & serve
Stir the chopped parsley into the creamy mushrooms.
Spoon generously over the toasted bread.
Garnish with a little extra parsley and serve immediately.
