Creamy Chicken, Leek & Bacon Filo Pie Recipe | Easy Family Dinner
Ingredients
800g x Chicken Thighs (Boneless and skinless)
120g x Smoky Bacon (cut into lardons)
2 x leeks (sliced)
20ml x Olive Oil
20g x Dijon Mustard
30g x Plain/All Purpose Flour
300ml x Chicken Stock
300ml x Double Cream
100g x Cheddar (Grated)
Salt & Black Pepper to Taste
6 sheets x Filo Pastry
Melted Butter
Method
Dice the chicken, cut the bacon into lardons and thinly slice your leeks.
Add the olive oil into a large pot and sear until golden on all sides, add in the bacon and cook until crisp. Next, place in the sliced leeks and cook for 3 to 4 minutes until soft. Stir through the mustard and sprinkle in the flour and stir to absorb the fat.
Pour in the chicken stock and bring to a simmer before add in the cream. Bring it back up to simmering and stir through the grated cheddar cheese. Season to taste with salt and black pepper. Go easy on the salt as both the bacon and cheddar already contain a lot of salt.
Brush a pie dish with melted butter and then layer up with the filo pastry brushing it with the butter between each layer. Place in the chicken pie filling and fold the overhanging pastry back over the top. Keep it looking rustic and generously brush with more melted butter.
Place into a preheated oven at 200°C for 40 minutes until golden brown and crisp.
Serve with sides of your choice and enjoy.
