This homemade granola is crunchy, naturally sweet, and perfect for easy meal prep. Made with rolled oats, nuts, seeds, and dried fruit, it’s a versatile recipe you can enjoy for breakfast, snacks, or even desserts. Ingredients


Dry Ingredients


550g x Rolled Oats

70g x Walnuts

70g x Almonds

70g x Hazelnuts

100g x Pumpkin Seeds

100g x Banana Chips


Wet Ingredients


200ml x Apple Juice

130ml x Maple Syrup (or honey or syrup of choice)

100ml x Olive Oil (or melted coconut oil)

1 teaspoon x Vanilla Bean Paste or Vanilla Extract


To Add After Baking


100g x Dried Apricots

100g x Dried Cranberries


Method


Preheat the oven

Preheat your oven to 170°C fan. Line one or more baking trays with parchment paper.


Prepare the dry ingredients

Place the rolled oats into a large mixing bowl.Roughly chop the walnuts, almonds, and hazelnuts, leaving a mix of chunky and smaller pieces. Add them to the bowl with the oats.Add the pumpkin seeds and banana chips to the bowl. This completes the dry ingredients.


Make the wet mixture

In a separate bowl or jug, combine the apple juice, maple syrup, olive oil, and vanilla. Whisk well until fully combined.


Combine wet and dry ingredients

Pour the wet mixture over the dry ingredients. Mix thoroughly until everything is evenly coated.


Spread onto trays

Spread the granola mixture evenly onto the prepared baking trays in a single, even layer. Do not pile it up. Use multiple trays or bake in batches if needed.


Bake the granola

Place the trays into the oven and bake for 25–30 minutes.Stir the granola every 10 minutes to ensure even toasting and prevent burning.


Prepare the dried fruit

While the granola is baking, roughly chop the dried apricots and dried cranberries. Do not add these during baking, as they will puff up, burn, and turn bitter.


Add dried fruit after baking

Once the granola is golden and toasted, remove it from the oven. While it is still warm, sprinkle over the chopped dried fruit and mix through gently.


Cool completely

Leave the granola to cool fully on the trays. It will crisp up further as it cools.


Store

Once completely cooled, transfer the granola to sealed, airtight containers and store in a cool, dry place.


Serving Ideas

Serve with yogurt, milk, or fresh fruit

Sprinkle over desserts, crumbles, or baking

Use as a base for granola bars or breakfast bars
