Method
- Step 1
Preheat the oven to 200°C fan (220°C conventional).
- Step 2
Add the tomatoes (500 g) and garlic to a baking dish. Sprinkle over the oregano (2 tsp), chilli flakes (½ tsp) and a generous amount of black pepper, then drizzle with the olive (60 ml) oil and toss together.
- Step 3
Nestle the block of feta (250 g) into the middle and drizzle with a little more olive (60 ml) oil.
- Step 4
Bake for 30-35 minutes, until the tomatoes (500 g) have burst and the feta (250 g) is golden around the edges.
- Step 5
Meanwhile, toast the pine nuts (20 g) in a dry frying pan over a medium heat for 2-3 minutes until lightly golden. Set aside.
- Step 6
Cook the pasta (100 ml) in well-salted water until al dente, reserving 150ml of the cooking water before draining.
- Step 7
Mash the roasted tomatoes (500 g) and feta (250 g) together until smooth and creamy.
- Step 8
Stir in the Parmesan (30 g) and 1 teaspoon of balsamic vinegar (1 tsp).
- Step 9
Add the cooked pasta (100 ml) along with enough pasta water to create a silky sauce.
- Step 10
Fold through most of the basil and half of the toasted pine nuts (20 g).
- Step 11
Serve topped with the remaining basil, pine nuts (20 g), extra Parmesan (30 g), cracked black pepper and, if you like, a final drizzle of balsamic glaze.
