This is the kind of dinner you’ll make once, and then wonder why you ever ordered takeaway. Crispy chicken coated in a sticky honey garlic sauce, served with rice, quick-pickled cucumber, spring onions and sesame seeds. It’s packed with flavour and makes a brilliant easy dinner for busy nights.

Method

  1. Step 1

    Cook the rice (300 g) according to the packet instructions.

  2. Step 2

    Meanwhile, combine the cucumber (1) with the rice vinegar (1 tbsp), sugar (1 tsp) and salt and leave to pickle while you cook everything else.

  3. Step 3

    Mix the chicken with the cornflour (2 tbsp), smoked paprika (1 tsp), garlic powder (½ tsp), a generous pinch of salt and plenty of black pepper until evenly coated.

    Heat the oil in a large frying (1 tbsp) pan over a medium-high heat.

  5. Step 5

    Cook the chicken for 6-8 minutes, turning occasionally, until golden, crispy and cooked through.

    Reduce the heat slightly.

    Add the garlic (½ tsp) and ginger (1 tsp) and cook for 30 seconds.

    Pour in the 80g honey (80 g), 60ml soy sauce, 1tbsp rice vinegar (1 tbsp), 1tbsp sweet chilli sauce (1 tbsp) and 1tsp sesame oil (1 tsp). Simmer for 1 minute.

  9. Step 9

    Stir in the cornflour (2 tbsp) slurry and cook for another minute until the sauce becomes thick, glossy and beautifully sticky.

  10. Step 10

    Divide the rice (300 g) between bowls. Top with the sticky chicken and spoon over any extra sauce.

  11. Step 11

    Finish with the pickled cucumber (1), spring onions (3 onions), sesame seeds and coriander.

  12. Step 12

    Serve with a wedge of fresh lime.
