Method
Step 1: Prep the veg
Dice the onion (1 small), mince (750 g) the garlic (3 garlic), and slice the bell peppers (2 peppers) thinly. Cut the brisket (1 kg) into large chunks, drizzle with a little olive oil (30 ml), season generously with salt and pepper, and set aside.
Step 2: Start the base
In a large, oven-safe pot or Dutch oven, heat a drizzle of olive oil (30 ml) over medium heat. Add the onion (1 small) with a pinch of salt and cook for 4-5 minutes until soft and translucent. Add the garlic (3 garlic) and sauté for 1 more minute.
Step 3: Cook the mince
Add the ground beef (300 ml) to the pot and cook until browned, breaking it apart as it cooks. Once no longer pink, stir in the cumin (4 g), paprika (4 g), chilli powder (2 g), and oregano (2 g). Let the spices toast for 30 seconds to bloom.
Step 4: Build the flavour
Pour in the beer (500 ml), beef stock (300 ml), and chopped tomatoes (800 g). Stir well to combine. Season with salt and pepper, then add the sliced bell peppers (2 peppers) and kidney beans (400 g). Bring to a gentle simmer.
Step 5: Sear the brisket
Meanwhile, heat a large frying pan over high heat until smoking hot. Add a touch of oil and sear the brisket (1 kg) chunks on all sides until nicely browned. Don't rush this - colour = flavour.
Step 6: Slow cook to perfection
Nestle the seared brisket (1 kg) into the chilli (2 g) mixture. Cover with a lid and transfer the pot to a preheated oven at 170°C (340°F). Let it braise low and slow for at least 4 hours, until the brisket is fall-apart tender.
Step 7: Shred & serve
Remove the pot from the oven. Take out the brisket (1 kg) pieces, shred them using tongs or forks, and return the meat to the pot. Stir everything together and let it sit for a few minutes before serving.
