Method

Step 1: prepare the vegetables

  1. Step 1

    Dice the onion (1 small))(s) and peppers into small dice.

  2. Step 2

    Peel and finely chop the garlic (3 garlic).

Step 2: cook the beef filling

    Heat olive oil (20 ml) in a large sauté pan over medium-high heat.

  2. Step 2

    Add the minced beef (500 g) and cook for 3-5 minutes, until browned and slightly caramelised.

  3. Step 3

    Stir in the onion (1 small)), peppers, and garlic (3 garlic). Season with salt and black pepper. Cook for another 3-5 minutes, until softened.

Step 3: build the sauce

  1. Step 1

    Add smoked paprika (10 g), cumin (5 g), and oregano (2 g) to the pan. Cook for 2 minutes to release the flavours.

  2. Step 2

    Stir in tomato (400 g) paste and cook for 1 minute.

  3. Step 3

    Pour in chopped tomatoes (400 g) and an equal amount of water (400 ml) (400 ml).

  4. Step 4

    Bring to a simmer and cook for 10 minutes, stirring occasionally, until thickened into a rich sauce.

  5. Step 5

    Taste and adjust seasoning.

Step 4: prepare the cheese

  1. Step 1

    Mix mozzarella (200 g) and cheddar (100 g) together in a bowl.

Step 5: assemble the enchiladas

  1. Step 1

    Spread a thin layer of sauce on the bottom of a baking dish to prevent sticking.

  2. Step 2

    Place a tortilla on a flat surface. Add a spoonful of beef (500 g) mixture and a sprinkle of cheese.

  3. Step 3

    Roll up the tortilla (tucking in the ends if you like) and place seam-side down in the dish.

  4. Step 4

    Repeat with remaining tortillas, aiming for 5-6 wraps (5 wraps).

  5. Step 5

    Spoon the rest of the sauce evenly over the top.

  6. Step 6

    Sprinkle generously with the remaining cheese.

Step 6: bake

  1. Step 1

    Preheat the oven to 180°C (350°F).

  2. Step 2

    Bake enchiladas for 20 minutes or until golden, bubbly, and melted on top.

Step 7: serve

  1. Step 1

    Garnish with fresh parsley.

  2. Step 2

    Serve hot with a side salad, rice, or guacamole.
