Method

  1. Step 1

To make the cajun seasoning, mix all of the ingredients together and place to one side until you're ready to use it.

  2. Step 2

Next, cut the chicken breast (500 g) into 1-inch cubes and coat in the seasoning. Cover and place into the fridge until you're ready to use it.

  3. Step 3

To prepare the vegetables, cut the onion and peppers into small dice and grate one clove of garlic (1 garlic) on a microplane. Finely slice the spring onions (2 onions) and place them into a bowl along with a pinch of the diced red and green peppers ready to garnish with later.

  4. Step 4

Place a large sauté pan over medium-high heat and add in the olive oil (25 ml) followed by the butter (30 g). Once the butter is foaming, add in the cajun chicken (500 ml). Seal off the chicken and remove it from the pan onto a plate. You do not need to cook the chicken completely at this stage. Place the pan back over the heat.

  5. Step 5

Add in the onions (1 tsp) and peppers and cook for 4 minutes until soft then add in the garlic (1 tsp) and cook for a further 1 minute. Pour in the chicken stock (500 ml) and bring to a simmer, add the chicken back into the pan along with the pasta (200 g). Mix and place a lid on, cook for 8 minutes stirring halfway through.

  6. Step 6

After 8 minutes remove the lid and stir through the cream cheese (80 g). Taste to check the seasoning and adjust with salt (½ tsp) and pepper if needed.

  7. Step 7

Serve and garnish with the chopped spring onion (2 onions) and diced peppers you put to one side earlier on.

Questions people ask

How long does one-pot cajun chicken pasta take?

About 45 min from start to finish, of which 25 min is prep and 20 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 4. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
