Method

  1. Step 1

For the prep, remove the sausage (6 sausages) meat from its casings, break it up into small pieces, and set it aside. Cut the onion (1 onion) into small dice, finely grate, chop, or crush the garlic (2 garlic), finely chop the rosemary leaves, and cut the cherry tomatoes (150 g) in half.

  2. Step 2

Place a large pan over medium-high heat. Once hot, add in the sausage (6 sausages) meat and cook for 5 minutes until cooked through. Remove from the pan onto a plate and add the diced onion (1 onion) into the pan followed by a pinch of salt. Turn the heat to low and cook for 5 minutes until soft.

  3. Step 3

Next, add in the garlic (2 garlic), rosemary, chilli flakes (¼ tsp), and paprika (1 tsp) and cook for 1 more minute. Add in the chopped tomatoes (800 g) along with one small glass of water, stir, and bring to a simmer. Add the cooked sausage (6 sausages) meat back into the sauce followed by the cream. Stir and season to taste with a pinch of salt and black pepper. Bring the sauce to a simmer, place a lid on and cook for 20 minutes.

  4. Step 4

At this stage, you will have time to cook your chosen pasta (350 g) to the packet instructions. Once you add your pasta into the water, turn your attention back to the sauce. Remove the lid and add in the halved cherry tomatoes (150 g). Leave the lid off until the pasta is ready.

  5. Step 5

Just before your pasta (350 g) is ready, take the sauce from the heat and stir through the grated parmesan (30 g) and basil (30 g) leaves. Mix the cooked pasta through the sauce and serve with an extra grating of parmesan, grind of black pepper, and basil leaves.

Questions people ask

How long does budget sausage ragù pasta take?

About 45 min from start to finish, of which 15 min is prep and 30 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 4. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
