Method

Make the fajita seasoning

  1. Step 1

    In a small bowl, combine: 2 tsp smoked paprika (2 tsp), 2 tsp ground cumin (2 tsp), 1 tsp garlic powder (1 tsp), ½ tsp cayenne pepper (½ tsp), 1 tsp dried oregano (1 tsp), ¼ tsp white pepper (¼ tsp).

    1 tsp saltMix well until evenly blended. Set aside.

Prepare the chicken

  1. Step 1

    Butterfly 3 chicken breasts (3 breasts) to make them thinner.

  2. Step 2

    Slice them into thin strips.

  3. Step 3

    Place the chicken strips into a mixing bowl.

  4. Step 4

    Sprinkle over half of the fajita seasoning and mix well until the chicken is evenly coated.

    Wash your hands after handling the raw chicken.

Prepare the vegetables

  1. Step 1

    Take 3 bell peppers (3 peppers) (any colour).

  2. Step 2

    Remove the stems and seeds.

  3. Step 3

    Slice between the ribs (the lines running around the pepper (3 peppers)) to avoid the white (¼ tsp) membrane, which can be slightly bitter.

  4. Step 4

    Trim away any remaining white (¼ tsp) membrane and tap the pepper (3 peppers) sections to shake out leftover seeds.

  5. Step 5

    Slice the pepper (3 peppers) sections thinly.

  6. Step 6

    Peel and slice 2 red onions (2 onions):

    Trim off the tops and bottoms, cut them in half, peel, and finely slice.

Cook the chicken

  1. Step 1

    Heat a large frying pan, sauté pan, or wok over high heat.

  2. Step 2

    Add about 2 tablespoons of oil (2 tbsp).

  3. Step 3

    Once hot, add the seasoned chicken.

  4. Step 4

    Spread it out in the pan and fry for 4-5 minutes, or until completely cooked through.

  5. Step 5

    Remove the chicken from the pan and set aside.

Cook the vegetables

  1. Step 1

    In the same pan, add the sliced peppers (3 peppers) and onions (2 onions).

  2. Step 2

    Stir-fry over high heat for 3-4 minutes, until they begin to soften.

Combine everything

  1. Step 1

    Sprinkle in the remaining fajita seasoning.

  2. Step 2

    Return the cooked chicken to the pan.

  3. Step 3

    Stir well so everything is coated evenly in the seasoning.

  4. Step 4

    Cook for a further 1-2 minutes to heat through.

  5. Step 5

    Your chicken fajita filling is now ready.

Warm the wraps

  1. Step 1: Choose your preferred method

    Oven: Warm for a couple of minutes.

  2. Step 2

    Frying pan: Heat each side for about 30 seconds.

  3. Step 3

    Microwave: Stack in a small pile and heat for 30 seconds.

Prepare the lettuce

  1. Step 1

    Use baby gem leaves (great as little cups) or shredded iceberg lettuce.

  2. Step 2

    You can layer the leaves on wraps or serve them on the side.

Assemble the fajitas

  1. Step 1

    Place a few lettuce leaves on a warm wrap.

  2. Step 2

    Spoon some chicken and vegetable filling into the centre (don't overfill, less is more if wrapping).

  3. Step 3

    Add a spoonful of soured cream (either on top or spread on the wrap first).

  4. Step 4

    Sprinkle over grated cheese.

  5. Step 5

    Fold in the sides, then fold the top over the filling, tucking as you roll to secure.

Serve

  1. Step 1

    Serve the fajitas immediately with extra soured cream, guacamole, or salsa on the side.
