Method
Prepare the chicken
- Step 1
Place the chicken (1 chicken) breast-side down. Using poultry shears (or a sharp knife), cut along each side of the backbone to remove it. Flatten the chicken by pressing firmly down on the breast until it lays flat.
- Step 2
Optional: make shallow slashes across the breasts and thighs to help the seasoning penetrate and cook evenly.
Make the spice rub
- Step 1
In a small bowl, mix together paprika (12 g), garlic powder (5 g), oregano (2 g), and salt (5 g).
- Step 2
Rub the spice mixture generously all over the chicken (1 chicken), massaging it into the slashes and skin.
Prepare the potatoes
- Step 1
Place halved new potatoes (700 g) on a large baking tray. Drizzle with olive oil (20 ml), add crushed garlic (5 g), dried thyme (1 tsp), salt (5 g), and black pepper. Toss well to coat evenly.
Assemble and cook
- Step 1
Lay the spiced chicken (1 chicken) directly on top of the potatoes (700 g) on the tray.
- Step 2
Roast in a preheated oven at 190°C (375°F) for 50-60 minutes, or until the chicken (1 chicken) is cooked through (juices run clear, internal temp 75°C/165°F).
Add the tomatoes
- Step 1
Around 10-15 minutes before the end of cooking, scatter vine cherry tomatoes around the tray. Roast until they soften and their skins just burst.
Finish & serve
- Step 1
Once cooked, remove from the oven and rest for 5 minutes.
- Step 2
Toss fresh parsley through the potatoes (700 g) (optional) for brightness.
- Step 3
Serve the chicken (1 chicken) whole on a board with the potatoes (700 g) and tomatoes arranged around it, family-style.
- Step 4
Lazy but Delicious: one tray, minimal effort, maximum flavour. Perfect for a family dinner or an easy Sunday roast alternative.
