Method

  1. Step 1

Dice the chicken (300 ml), cut the bacon (120 g) into lardons and thinly slice your leeks (2).

  2. Step 2

Add the olive oil (20 ml) into a large pot and sear until golden on all sides, add in the bacon (120 g) and cook until crisp. Next, place in the sliced leeks (2) and cook for 3 to 4 minutes until soft. Stir through the mustard (20 g) and sprinkle in the flour (30 g) and stir to absorb the fat.

  3. Step 3

Pour in the chicken stock (300 ml) and bring to a simmer before add in the cream. Bring it back up to simmering and stir through the grated cheddar (100 g) cheese. Season to taste with salt and black pepper. Go easy on the salt as both the bacon (120 g) and cheddar already contain a lot of salt.

  4. Step 4

Brush a pie dish with melted butter and then layer up with the filo pastry (6 sheets) brushing it with the butter between each layer. Place in the chicken (300 ml) pie filling and fold the overhanging pastry back over the top. Keep it looking rustic and generously brush with more melted butter.

  5. Step 5

Place into a preheated oven at 200°C for 40 minutes until golden brown and crisp.

  6. Step 6

Serve with sides of your choice and enjoy.

Questions people ask

How long does chicken, leek and bacon filo pie take?

About 1 hour from start to finish, of which 15 min is prep and 44 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
