Method

Prep and cook chicken

  1. Step 1

    Season the chicken (250 ml) breasts (2 breasts) on both sides with salt and black pepper.

  2. Step 2

    Heat 1 tbsp olive oil (1 tbsp) in a large pan over medium-high heat.

  3. Step 3

    Sear the chicken (250 ml) for 4-5 minutes per side, until golden and fully cooked.

  4. Step 4

    Remove chicken (250 ml) from the pan and set aside to rest.

Make the sauce

  1. Step 1

    Lower the heat to low.

  2. Step 2

    In the same pan, add 1 tbsp oil from the sun-dried tomato (120 g) jar and the minced garlic (3 garlic).

  3. Step 3

    Cook for about 1 minute, stirring often.

  4. Step 4

    Add the chopped sun-dried tomatoes (120 g) and stir.

  5. Step 5

    Pour in the chicken stock (250 ml) and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let it reduce slightly for 2-3 minutes.

    Stir in the cream and bring to a gentle simmer (do not boil).

Cook the pasta

  1. Step 1

    In a separate pot, boil the pasta (250 g) in salted water until 2-3 minutes before al dente (a little undercooked).

  2. Step 2

    Reserve ½ cup of pasta (250 g) water before draining.

Combine everything

  1. Step 1

    Remove the sauce from the heat.

  2. Step 2

    Stir in the Parmesan cheese (50 g) until melted.

  3. Step 3

    Add the drained pasta (250 g), baby spinach (60 g), and a splash of the reserved pasta water. Stir to combine.

  4. Step 4

    Slice the rested chicken (250 ml) and return it to the pan.

  5. Step 5

    Stir everything together and return the pan to low heat for a few minutes, until the sauce thickens and coats the pasta (250 g).

Serve

    Divide into bowls.

  2. Step 2

    Top with more Parmesan, fresh basil leaves, and cracked black pepper if desired.
