Method

  1. Step 1

Place the butter (125 g) into a saucepan and melt over low heat. Once melted, take off the heat immediately and add in the dark chocolate (125 g). Stir off the heat until the chocolate has fully melted.

  2. Step 2

Crack your eggs (3) into the mixing bowl of a stand mixer (you can use a hand mixer for this) and add in the light brown sugar (125 g). Whisk on high until it has doubled in size, pale in colour, and is light and fluffy.

  3. Step 3

Pour the egg (3) and sugar mixture into the chocolate (125 g) mixture and gently fold it in until it is fully incorporated.

  4. Step 4

Next, sift in the self-raising flour (75 g) into the brownie mixture and add a pinch of salt. Fold the flour in until it is fully mixed in.

  5. Step 5

Now, stir in the milk chocolate chunks (100 g). You can add, nuts and dried fruit at this stage if you like.

  6. Step 6

Pour the brownie mixture into a baking tray/pan lined with parchment paper and bake in a preheated oven at 170°C for 30 to 50 minutes depending on how fudge or cakey you like your chocolate (125 g) brownie. I like to bake mine for 40 minutes.

  7. Step 7

Serve warm with, cream, custard, salted caramel, or ice cream and enjoy.

Questions people ask

How long does chocolate brownies take?

About 1 hour 40 min from start to finish, of which 10 min is prep and 1 hour 30 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 6. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
