This chocolate mousse recipe with a twist of orange is the perfect way to finish a meal. The mousse was originally created in France and with it's delicate, light and airy texture it is a definite show stopper to bring out at a dinner party. Definitely a decadent dessert you need in your life.

Method

  1. Step 1

    Begin by pouring the double cream (200 ml) into a heavy-based saucepan. Bring to the boil and instantly remove from the heat.

  2. Step 2

    Break the dark chocolate (200 g) into small pieces and add it into the hot cream. Stir the cream and chocolate until the chocolate has fully melted. Add in a pinch of sea salt and stir.

  3. Step 3

    Next, add in the butter (20 g) and stir until you have got a silky, shiny chocolate (200 g) mixture. If you're adding orange zest, add it in now. Leave the mixture to cool for 5 minutes.

  4. Step 4

    Separate the egg (3 eggs) yolks from the egg whites. Whip the egg whites until they reach stiff peaks and add in the caster sugar (30 g). Whip for 1 more minute until the sugar has dissolved. Use a free-standing mixer or an electric hand whisk to do this.

  5. Step 5

    Now that the chocolate (200 g) mixture has cooled a little bit, it's time to beat in the egg (3 eggs) yolks.

  6. Step 6

    Finally, gently fold in the whipped egg (3 eggs) whites until fully incorporated. Pour the mixture into four glasses and leave to set in the fridge for a minimum of four hours, although overnight will be better.
