Method

  1. Step 1

Grate the courgette (300 g) coarsely, then place it in a clean tea towel and gently squeeze out some of the excess moisture. Don't squeeze it completely dry, you want to retain some of its moisture to help keep the brownies fudgy.

  2. Step 2

Preheat the oven to 170°C fan. Line a 20 × 30cm baking tin with baking parchment.

  3. Step 3

Place the butter (250 g) in a saucepan and melt over a low heat. Remove from the heat immediately, add the dark chocolate (350 g) and stir until completely melted and smooth. Set aside to cool slightly.

  4. Step 4

Crack the eggs (6 eggs) into the bowl of a stand mixer, add the light brown sugar (250 g) and whisk on high speed for 2-3 minutes, until pale, thick and roughly doubled in volume. You can also use a hand mixer.

  5. Step 5

Pour the egg (6 eggs) and sugar mixture into the slightly cooled chocolate (350 g) mixture. Gently fold together until fully incorporated, taking care not to knock out too much of the air.

  6. Step 6

Sift the self-raising flour (200 g) into the mixture, add the sea salt and gently fold until just combined.

  7. Step 7

Gently fold through the prepared courgette (300 g) until evenly distributed.

  8. Step 8

Pour the mixture into the prepared tin and spread evenly. Bake for 25 to 30 minutes. The brownies should have a set, slightly crackled top and firm edges, while the centre should still have a slight wobble when you gently shake the tin.

  9. Step 9

Leave the brownies to cool in the tin for at least 1 hour before cutting. For the fudgiest texture, refrigerate them once cool for another 30-60 minutes before slicing.

  10. Step 10

Cut into 12 squares and serve as they are, or warm slightly.

Questions people ask

How long does courgette chocolate brownies recipe take?

About 2 hours 20 min from start to finish: 20 min of prep, 30 min of cooking, and 1 hour 30 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does it make?

As written it makes 12 slices. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Can I cook it ahead?

This one sits in the batch cooking group, which means it was picked for cooking in quantity rather than eaten straight from the pan. Cool it quickly, and freeze it in the portion sizes you will actually want later.
