Creamy, savoury and surprisingly delicious, this Marmite pasta combines caramelised onion, garlic, cream, Marmite and mature Cheddar for a simple pasta dish packed with flavour.

Method

  1. Step 1

    Cook the pasta (200 g) in a large pan of well-salted boiling water until al dente.

  2. Step 2

    Meanwhile, heat the olive oil (1 tbsp) in a large frying pan over medium heat. Add the onion (1 onion) and cook for 5-7 minutes, stirring occasionally, until soft and lightly golden.

  3. Step 3

    Add the garlic (2 cloves) and cook for another 30 seconds.

  4. Step 4

    Add the cream and Marmite (1 tsp), stirring until the Marmite has completely dissolved. Season with black pepper and taste before adding any salt - the Marmite will already bring plenty of saltiness.

  5. Step 5

    Once the pasta (200 g) is cooked, remove the sauce from the heat. Add the parsley and stir it through before lifting the pasta directly into the sauce, taking a little of the pasta water with it.

  6. Step 6

    Add the parsley and toss everything together until the sauce becomes glossy and coats the pasta (200 g). Add another splash of pasta water if needed.

  7. Step 7

    Serve immediately with plenty of finely grated mature Cheddar (40 g) over the top.
