Crispy Filo Apple Pie with Brown Butter

Method
- Step 1
Melt 75g of the butter (175 g) in a large frying pan over medium heat. Continue cooking until it foams and the milk solids turn golden brown (100 g) and smell nutty. Remove from the heat and set aside.
- Step 2
Add the sliced apples (1 kg) to the same pan along with the brown (100 g) sugar, cinnamon (1 tsp), mixed spice (½ tsp), lemon (1 juice) zest and juice, vanilla (1 tsp) and a pinch of salt.
- Step 3
Cook over medium heat for 6-7 minutes, stirring occasionally, until the apples (1 kg) have softened slightly but still hold their shape.
- Step 4
Remove from the heat and stir through the brown (100 g) butter (175 g). Leave the filling to cool completely.
- Step 5
Preheat the oven to 180°C fan / 200°C conventional.
- Step 6
Melt the remaining 100g butter (175 g).
- Step 7
Lay a sheet of filo into a 22-24cm round cake tin or pie dish, allowing the edges to hang over the sides. Brush lightly with melted butter (175 g).
- Step 8
Add another sheet at a slight angle and brush with butter (175 g). Continue layering the filo, rotating each sheet slightly, until you have 8-10 layers.
- Step 9
Spoon the cooled apple filling into the centre of the pastry (8 sheets). Fold the overhanging filo loosely over the apples (1 kg), leaving some of the pastry ruffled and exposed.
- Step 10
Brush the top with the remaining melted butter (175 g) and bake for 35-45 minutes, until the filo is deeply golden and crisp.
- Step 11
Leave to rest for 10-15 minutes, then dust with icing sugar and serve warm with vanilla (1 tsp) ice cream.
