Method

  1. Step 1

Begin, by taking the onions (2 onions) and removing the root and stem before completely peeling the remaining skin away. We use a small paring knife to do this.

  2. Step 2

Next, cut the onions (2 onions) into one-inch slices, that's roughly two and a half centimetres. Press down on the centre of the onion rings and the individual onion rings will pop straight out.

  3. Step 3

To make the batter, simply place the self-raising flour (150 g), a pinch of salt and a few grinds or a pinch of black pepper into a bowl followed by the sparkling water (180 ml). Whisk until completely smooth and the mix resembles a pouring cream-like consistency.

  4. Step 4

Add in three to four ice cubes. This helps to keep the mix really cold and puff up when it hits the hot sunflower oil.

  5. Step 5

On a plate add plain flour (150 g), a pinch of salt and black pepper. There is no specific amount of flour but enough to coat the onion (2 onions) rings before dipping them into the batter.

  6. Step 6

Next heat the sunflower oil to 180°C - 356°F. Toss the onion (2 onions) rings into the seasoned flour (150 g) and then dip them into the batter and then back into the flour again and into the batter one final time.

  7. Step 7

Gently place the double battered onion (2 onions) rings into the hot oil and cook for 2 minutes on each side or until crisp and golden. Remove from the oil onto kitchen paper to absorb any excess oil. Give a little sprinkle of salt and enjoy.

Questions people ask

How long does crispy golden onion rings take?

About 12 min from start to finish, of which 10 min is prep and 2 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegan?

Yes, as written. Check the labels on anything shop-bought, which is where animal products tend to hide.
