Method

  1. Step 1

Begin by taking the chestnut mushrooms (250 g) and cutting them into quarters.

  2. Step 2

Next, place a frying pan onto medium heat and add a small drizzle of olive oil, followed by the butter (15 g).

  3. Step 3

Add the quartered chestnut mushrooms (250 g) into the pan along with a pinch of salt. Cook for 5 minutes, stirring occasionally until they are soft and starting to brown on the outside.

  4. Step 4

Take the clove (1 clove) of garlic, peel and finely chop it. You can also use a garlic crusher of a fine grater to do this. Add the chopped garlic into the pan and cook for a further 2 minutes.

  5. Step 5

Next, pour in the double cream (250 ml) and a pinch of black pepper. Leave to simmer for 3 to 5 minutes.

  6. Step 6

While the cream is simmering away, take the fresh parsley and chop it as finely as you can. Once chopped stir it straight into the creamy mushrooms (250 g).

  7. Step 7

At this stage the mushrooms (250 g) are ready. If you would like the sauce thicker you can cook them for a couple of extra minutes, the sauce will reduce down. If the sauce ends up to thick, don't worry, you can always add an extra splash of cream to loosen it up again.

  8. Step 8

Now, to toast the ciabatta. Place a griddle or frying pan onto the heat. Cut the ciabatta to your desired size and slice through the centre to open it up. Drizzle with a little olive oil and sprinkle with a touch of salt. Place oil side down into the hot pan and cook until golden, this will only take minute so be sure to keep a close eye on it.

  9. Step 9

To serve. Take the toasted ciabatta and top it with a small handful of rocket (30 g) leaves. Then, generously cover the rocket and ciabatta with half of the creamy garlic mushrooms (250 g). Finish with a sprinkle of freshly chopped parsley.

Questions people ask

How long does garlic mushrooms on toasted ciabatta take?

About 25 min from start to finish, of which 15 min is prep and 7 min is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.

How many does it serve, and can I change that?

As written it serves 2. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
