Method
- Step 1
Begin by butterflying the chicken breast (2 breast) and then cut in half to create two fillets from each breast. For the buttermilk (300 ml) marinade, place the buttermilk into a mixing bowl and add in the spices. Whilst together until fully combined. Add in the chicken. Cover and place into the fridge for 1 hour or ideally overnight.
- Step 2
To make the spiced flour (100 g) coating, place all ingredients into a bowl and mix until they're fully incorporated.
- Step 3
To coat the chicken, take each fillet from the buttermilk (300 ml) and dust it in the flour (100 g) mixture. One coating is fine however I like to dip it back into the buttermilk and into the flour a second time for a stronger and crispier crust.
- Step 4
To make the sauce, place a pan over medium heat and add in the tomato passata (100 ml) followed by the honey (70 g), chipotle crunch/chipotle chilli flakes (1 tsp), garlic powder (1 tsp), and smoked paprika (1 tsp). Mix before adding in the butter (50 g). Heat until the butter melts and is incorporated into the sauce, season to taste with salt (1 tsp) and pepper and remove from the heat.
- Step 5
Place a large pan over medium-high heat suitable for deep frying and fill it halfway with your chosen frying oil. I'm using sunflower oil here. Heat it to around 180°C.
- Step 6
While the oil is heating, make a quick garlic (1 tsp) mayonnaise (60 g) by combining the mayonnaise, minced garlic and dried oregano (½ tsp) and mixing well.
- Step 7
Place the coated chicken into the hot oil in batches and cook for 8 minutes until golden and crisp.
- Step 8
Next, place the fried chicken into the chipotle hot honey (70 g) sauce until all of the chicken is fully coated.
- Step 9
To assemble, toast your burger buns (4 buns) and place some garlic (1 tsp) mayonnaise (60 g) on each side. Then some of the shredded lettuce on the bottom followed by the crispy, glazed chicken and finish with sliced pickled gherkin (2 gherkins).

Questions people ask
How long does buttermilk fried chicken sandwich with hot honey take?
About 1 hour 45 min from start to finish: 35 min of prep, 8 min of cooking, and 1 hour 2 min hands-off while it waits. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.
How many does it serve, and can I change that?
As written it serves 4. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.
Can I see the ingredients in ounces and pints?
Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
