Method

  1. Step 1

    Peel and dice the onion (1 onion), peel and thinly slice the garlic (4 garlic) cloves and peel and grate the ginger (25 g) on a microplane.

  2. Step 2

    Place a sauté or frying pan over medium heat and drizzle in the olive oil (20 ml), then add in the diced onions (1 onion) followed by a pinch of salt and cook for 5 minutes until soft. Next, add in the garlic (4 garlic) and ginger (25 g) and cook for 1 minute. Then add in the mustard seeds (1 tsp) and cook for a further 1 minute.

  3. Step 3

    Add in the chopped tomatoes (400 g) and 200ml of water (200 ml), stir and bring to a simmer before adding the cumin (1 tsp), chilli flakes (½ tsp), garam masala (1 tbsp), and turmeric (1 tsp). Stir and add in the lentils (200 g).

  4. Step 4

    Next, pour in the coconut milk (400 ml) and bring to a simmer, place a lid on and cook for 40 minutes stirring every 10 minutes during the cooking.

  5. Step 5

    Season to taste with salt and black pepper and stir through the juice of 1 lime. Finish with fresh coriander. Serve with rice or flatbread and enjoy.
