Method
- Step 1
Begin by chopping the green tomatoes (1 kg) and red onions (1 kg) into small dice.
- Step 2
Next, finely chop the garlic (4 garlic) and jalapeño peppers (4 peppers).
- Step 3
Place all ingredients into a large pan. Bring to a boil and immediately turn down to low heat.
- Step 4
Simmer for 3 hours, stirring every 20 minutes until the chutney has reduced down, reaches a much darker colour and stickier consistency.
- Step 5
Pour the chutney into sterilised jars while still hot and seal with a lid.
- Step 6
Store for up to one year before opening. Once open, keep it in the refrigerator and eat within one month.
