Method
- Step 1
Begin taking the red onions (6 onions) and removing the top and tail, cut them in half, remove the skins and slice.
- Step 2
Place a large saucepan over a medium to high heat. Add in the olive oil (20 ml) and then the sliced onions (6 onions) followed by a pinch of sea salt. Cook for 5 minutes stirring occasionally.
- Step 3
Next, add in the light brown sugar (130 g), balsamic vinegar (150 ml), juice of two oranges (2) and two strips of orange rind (2 rind).
- Step 4
Leave whole but lightly crush two cloves of garlic (2 garlic) and add them into the pan.
- Step 5
Gather together the cinnamon stick (1 stick), cloves (6) and star anise (1 anise). Wrap them in a small piece of muslin cloth or I used a loose leaf tea infuser. Add them into the pan.
- Step 6
Next, finely grate the ginger (10 g) using a Microplane and add it to the pan. Give everything a good mix and cook over low heat for roughly 45 minutes until the liquid had reduced and the chutney is a sticky, shiny, jam-like consistency. Remember to give it a stir every 5-10 minutes.
