Method

  1. Step 1

Start by popping your popcorn kernels (100 g) and set to one side in a large heatproof bowl.

  2. Step 2

Place caster sugar (200 g) and golden syrup (100 g) into a large saucepan and place over a medium heat.

  3. Step 3

Heat the caster sugar (200 g) and golden syrup (100 g) until you have a deep golden brown caramel.

  4. Step 4

Remove the pan from the heat, sprinkle the bicarbonate of soda (2 tsp) on to the caramel and whisk. The mixture will froth up straight away. Please take care while whisking as the caramel will be extremely hot. Congratulations, you've Just made honeycomb.

  5. Step 5

Carefully mix the honeycomb caramel with the popcorn using a wooden spoon until every piece is completely coated. Leave to cool on a lined baking tray.

Questions people ask

How much does this make?

The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Is it vegan?

Yes, as written. Check the labels on anything shop-bought, which is where animal products tend to hide.
