Method
- Step 1
Place the fruit into a blender and blitz until smooth.
- Step 2
Pass the fruit through a fine sieve using the back of a spoon or ladle to push through as much fruit as you can, leaving any seeds and skin behind.
- Step 3
Add your sugar and water (40 ml) into a saucepan and heat until the sugar has dissolved, remove from the heat and allow to cool.
- Step 4
Once cool combine the sugar syrup with the fruit purée and mix.
- Step 5
At this point, if you are using an ice cream maker you can pour the mixture in and churn until frozen.
- Step 6
If you don't have an ice cream maker pour the mixture into a lidded container and pop it into the freezer. Churn using a fork every 30 minutes for 3 to 4 hours until frozen.

Questions people ask
How long does raspberry and gooseberry sorbet take?
About 4 hours 10 min from start to finish, of which 10 min is prep and 4 hours is cooking. That figure is worked out from the method rather than timed with a stopwatch, so give yourself a little more the first time.
How much does this make?
The original recipe did not state a yield, so nothing has been invented for it. The scale control on the recipe card multiplies the quantities instead, which is the honest version of the same thing.
Can I see the ingredients in ounces and pints?
Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.
Can I cook it ahead?
This one sits in the batch cooking group, which means it was picked for cooking in quantity rather than eaten straight from the pan. Cool it quickly, and freeze it in the portion sizes you will actually want later.
Is it vegan?
Yes, as written. Check the labels on anything shop-bought, which is where animal products tend to hide.
