Method

  1. Step 1: Make the lamb patties

    In a large mixing bowl, combine the lamb mince (475 g), grated onion (1 onion), garlic (2 cloves), mint (15 g), parsley (15 g), cumin (4 g), coriander (4 g), salt, and pepper. Mix thoroughly until everything is evenly incorporated. Divide the mixture into 4 equal portions and shape into balls. Chill in the fridge until ready to cook.

  2. Step 2: Prepare the mint yoghurt sauce

    In a jug or food processor, combine the mint (15 g), coriander (4 g), salt, sugar, vinegar (10 ml), and boiling water (50 ml). Blend until smooth. Stir the herb mixture through the Greek yoghurt (280 g) until well combined. Cover and refrigerate until serving time.

  3. Step 3: Cook the burgers

    Heat a frying pan over high heat. Add the lamb balls and flatten them into patties using a spatula. Cook for 2-3 minutes per side, or until nicely browned and cooked through.

  4. Step 4: Assemble the burgers

    Toast the burger buns (4 buns). Spread a little mint (15 g) yoghurt (280 g) sauce on the bottom half of each bun. Layer with sliced cucumber, then a lamb burger, a spoonful more sauce, tomato slices, shredded lettuce, and red onion. Top with the other half of the bun.
