Method

  1. Step 1

    Cut the monkfish (200 g) into large bite-sized pieces and place them into a bowl. Add in the zest and juice of a lime (1), the garlic (3 garlic), coriander (10 g), olive oil (40 ml) and a pinch of salt and black pepper. Mix and leave in the fridge until ready to use.

  2. Step 2

    To make the mango (1) salsa, place the prepared ingredients into a bowl and mix until well combined.

  3. Step 3

    For the avocado (1 avocado) puree, place the ingredients into a blender and blend until smooth. Season to taste with salt and black pepper.

  4. Step 4

    To cook the monkfish (200 g), place a frying pan over medium heat and allow it to heat up for 2 minutes. Add in the monkfish leaving most of the marinade behind in the bowl. Cook for 2 to 3 minutes on each side until completely cooked through and lightly charred on the outside.

  5. Step 5

    To serve place some lettuce onto the centre of a tortilla and spoon over the avocado (1 avocado) cream. Next, place on 2 or 3 pieces of monkfish (200 g) and a spoonful of mango (1) salsa. Finish with a squeeze of lime (1) and some fresh coriander.
